Singapore Chili Crab

  • One dungeness crab. Live is always the best comparing to precooked one. Clean and cut.

  • In a wok, add diced garlic (lots!) and sliced onions & shallots. Add salt, pepper, mushroom spice, tomato sauce, ketchup, chili flakes, and sriracha chili sauce. Add soaked vermicelli. Add some water. Cook till the vermicelli is done. Taste it. If the sauce is not intense, add more ketchup, mushroom spice, salt, and chili sauce.

  • Add the crab to the wok. Add 1/2 cup of white wine or scotch. Stir and cover for about 10 minutes.

  • When the crab is almost cooked, add cornstarch for thickening (mix two tbsp of cornstarch with 1/2 cup of water).

  • Beat two eggs in a small bowl. Then pull over the crab. Stir to let the egg cook evenly.

  • That’s it! You could decorate this dish with steam broccoli for colors. Serve with jasmine steam rice.

Fragrance Oil Rice (Yau Fan)

  • Mix one cup of jasmine rice with one cup of sticky rice. Wash, drain, and put in the rice cooker with 2 cups of water. Press cook.

  • In a wok, add oil, diced garlic, diced onion, diced celery, diced shiitake mushrooms. Add salt, mushroom spice, white pepper, and soy sauce.

  • For non-vegetarian: add diced fish cakes.

  • Add the cooked rice, stir.

  • Ready to serve!

  • Squeeze out the water from the tofu using a white cloth. Put the tofu in a food processor. Add salt, pepper, paprika (for color), mushroom spice, garlic powder, 1/4 cup of chickpea flour, 2 tbsp of oil & tapioca starch. Blend till it thickens. Blend the veggie dogs and shiitake mushroom separately.

  • Lay the tofu blend first on tofu skin/soy sheet. Add the veggie dog blend on the second layer. Then the shiitake mushroom blend. Roll it to a big roll.

  • Wrap with aluminum foil and bake for 45 minutes at 350 F (176 C). Remove the aluminum foil. Baste the tofu turkey with the mustard mix.

Vegetarian Tofu Turkey Pot Roast

Ingredients:

  • Must use a food processor. This is not an option.

  • Two packages of organic firm tofu (four pieces total), 5 veggie dogs, 5 shiitake mushrooms (pre-soaked), two big pieces of fresh/soft tofu skin or soy sheet.

  • For basting, mix mustard, honey, maple syrup, and soy sauce.

Homemade Vegetarian Chili

In a pot, add oil, diced garlic, diced onion, diced tomatoes, cumin, salt, pepper, paprika, and cayenne pepper. Add a jar of tomato sauce. Let it simmer. Add diced celery, then pinto and/or kidney beans,. The portion of tomato sauce is equal to the portion of beans. When it is done, add vegetarian chorizo. Cook for 5 minutes. Serve with corn bread or rice.

Chicken or Vegetarian Tamales

In a mixer, beat 1 cup of oil for one minute. Then add 6 cups of corn masa flour, salt, 1 tbsp of baking powder, garlic powder, 1 cup of oil. Blend at medium speed. Add 4 to 5 cups of stock (either vegetarian or chicken stock). When it is done blending, add 1/2 cup of sour cream. Blend well.

For the filling sauce: in a pan, add oil, diced garlic, diced onions, chili powder, tomatoes, salt and pepper. For the protein, either use cooked chicken or vegetarian chorizo.

Rinse the corn hush with boiling water. When making the tamales, put the blended corn mix first, then the filling sauce and meat.

In a big pot, add water to about 1/4 of the height of the pot. Stand up the tamales inside the pot. Cover and steam for 30 minutes.

Very Delicious Gluten Free Pizza

  • Follow Bob’s Red Mill gluten free pizza crust mix recipe. This is the best brand I have found. I have not come up with my own pizza flour yet.

  • My modification of this recipe is I let the dough rise for a long time even overnight underneath my computer desk where it is warm!

  • For the tomato sauce: In a pan with medium heat, add olive oil,, lots of crushed garlic, chopped onions, salt, black pepper, paprika, and dry chili pepper. Simmer and let it cool completely before putting it on the pizza.

  • I use a cast iron pan and dust it with uncooked gluten free flour (such as corn flour or rice flour) instead of using oil. It works very well and does not stick at all. The cast iron pan holds the heat evenly in the oven.

  • Before putting the uncooked pizza though in the oven, brush the top of the dough with some olive oil. Cook it till it starts to turn golden. Then add the tomato sauce. Cook it till it is about 90% done, add the rest of t the toppings. Cheese is always last.

  • Suggested toppings: Smoke salmon (substitute with vegetarian chorizo), capers, tomato sauce, garlic, mozzarella cheese.

  • Baking temperature: 375 degree (190).

Paneer Tikka Masala

Cut paneer in cubes. Marinated it with masala, cumin, cinnamon, paprika, turmeric, salt, pepper, and Indian yogurt overnight.

Next day, pan fry the marinated paneer.

In oiled pan, add diced onion and garlic in oil, add masala, cumin, cinnamon, paprika, turmeric, salt, and pepper. Add tomato sauce. Blend onion, garlic, and cilantro into paste. Add to the sauce.

Add the paneer. Add Indian yogurt and then coconut milk.

Chu’s Yummy Cioppino

  • Heat olive oil in a pot at medium heat.

  • Add 2 tablespoons of crushed garlic, 2 bay leaves, and diced onion.

  • Add 1/2 teaspoon of cumin and 2 tablespoons of paprika.

  • Add 1/2 teaspoon of turmeric and 1/2 teaspoon of cayenne pepper.

  • Add 1 teaspoon of crushed chili pepper, mushroom spice, salt and pepper.

  • Add sliced carrot, celeries, and potatoes.

  • Add one jar of tomato sauce and 2 cups of water.

  • Simmer till potatoes are beginning to soften. Add diced zucchini.

  • Skip the following if you are a vegetarian:

    • Add cubed mahi mahi, halibut, or salmon. Add 1/2 cup of scotch.

    • Add dungeness crabs, clams, prawns, squids, and mussels. Simmer till the seafoods are all cooked but not overcooked.

  • Taste the soup. If it does not taste “intense”, add more paprika, cayenne pepper, and crushed chili pepper. Serve with baguette or steam rice.

Hot Sizzling Claypot

  • Pan fry tofu and set aside.

  • In a clay pot with medium heat, add oil, garlic, onion, and soaked shiitake mushroom, soy sauce, mushroom spice, and black pepper. Add 1.5 cups of hot water and let it simmer in a clay pot with the lid on.

  • Add soaked vermicelli. When the vermicelli is cooked, add vegetables such as bok choy and broccoli. Add some salt.

  • Add fish balls and prawns (skip this step for vegetarian).

  • Add 1 tablespoon of white wine. Mix 1 tablespoon of cornstarch with some water and add to the clay pot. When everything is cooked, add the pan fried tofu.

  • Pan fry an egg and put on top. Serve with hot steam jasmine rice.
