Gluten Free “Ramen”

Add water to the pot, add a table spoon of organic miso paste, a table spoon of paprika powder, salt, mushroom spice, and pepper. It is optional to add a pinch of chili flake if you like the soup to be a bit spicy which is great during the winter. Cover and bring to boil.

When the soup is boiling, add your gluten free ramen or you can use vermicelli. Reduce the heat to medium, add chopped mushrooms, chopped green beans, carrots, and gogi berries (optional). For non-vegetarians, add your favorite meat such as fish balls.

Add one organic egg into the soup and cover. Lastly, add sesame oil. Bon appetite!

Tumeric Rice with Beans

This recipe is packed with beautiful and nutritional vegetables and seeds!

  • Stir fry cooked rice (overnight rice is even better) with salt, sugar, and 1/2 teaspoon of turmeric plus black pepper. Put in a serving bowl.

  • Stir fry shredded carrots with an organic egg. Add soy sauce. Put on top of the rice (see picture).

  • Stir fry green beans with chopped garlic, salt and pepper. Put on top of the rice (see picture).

  • Add raw sunflower seeds. Add hemp hearts seeds. That’s it! Enjoy :)

Vegetarian Hot & Sour Soup With A Korean Twist

On a cold winter night, there is no other soup more soothing to my stomach than this hot and sour soup! Because of my recent amazing experience visiting South Korea, I changed my original recipe to add in with a Korean twist :).

  • About an hour before making the soup, soak the dried shiitake mushroom in hot water till it is soft. Then cut them into thin slices.

  • Boil the water in a pot. Add the shiitake mushroom, some miso paste, soy sauce, mushroom spice, black pepper, paprika, thinly sliced white onion, thinly sliced carrot, and thinly sliced celery. Let it cook for a while.

  • Add Korean chili paste.

  • Then add cornstarch or potato starch to the soup to thicken the soup.

  • Cut the medium firm tofu into thin slices. Put into the soup (don't over cook the tofu).

  • Beat an egg in a small bowl and add that to the soup.

  • Add about 2 tablespoon of balsamic vinegar.

  • Lastly, add sesame oil. Serve with rice .

Tomatoes & Eggs

This recipe is so simple!

  • Saute diced garlic in oil. Add chopped tomatoes. Add salt, mushroom spice and black pepper. Stir and then cover.

  • When the tomatoes are cooked, add eggs. Stir.

  • Serve when it is cooked.
